Here is an idea of a quick and easy recipe for a gluten-free snack that you can take with you wherever you go.
Bake a banana and let it cool down. After about ten minutes, cut the core out of the end of a raw Banana and scoop out the insides. Use a nutmeg grater to grate in the nutmeg into the center of each slice. Place the cooled slices on a baking sheet and cover with a piece of foil. In about ten minutes you will have a delicious and healthy banana chocolate bar.
To prepare the muffins: preheat the oven and set the timer for a thirty minute bake time. In a large sauce pan, combine a half a cup of reduced fat milk, a quarter cup of packed light cream, a quarter cup of brewed green tea, two-thirds cup of fresh squeezed lemon juice, and one tablespoon of ground flaxseed oil. Stir to mix well. Cook on low until the liquid comes to a simmer and then turn the oven off.
In a large nonstick frying pan, cook about four cups of unsalted peanuts, combined with three-quarters of a cup of slightly warmed sunflower seeds. Once the nuts are almost dry, add a quarter cup of brown sugar and mix until completely blended. Now mix in one whole cup of finely chopped pecans. Cover the baked muffin with almond flour and pop into the oven. Let the gluten free muffins cool and serve with maple or brown sugar glazed champagne.
You can use this recipe for chocolate-coated banana bread or oatmeal cookies instead of muffins. Using bananas and brown sugar is the only change that you have to make. Combine all the ingredients except walnuts and mix thoroughly. Let the mixture to freeze for at least two hours before cutting into wedges. When the cake is frozen, remove it from the freezer and cut into wedges. You will need to add enough walnuts to make about two cups of cake, but you can reduce the amount of walnuts to your taste.
For another delicious and healthy breakfast treat, substitute vanilla pudding for the chocolate pudding and use applesauce as an alternative to oil for a healthier option. Combine the ingredients and let freeze until ready to use. If you are using applesauce, only add enough apple vinegar to make a thin coating over the pudding mixture. The idea is to add enough vinegar so that the applesauce coating does not harden, but you can add as much or as little as you desire.
